Mezcal Glazed Ham

Preheat your oven to 300 F. In a large roasting pan, place the ham on a rack/ bed of onions and add about ¼ to ½ inch of water/ stock to the pan. Cover your ham with loosely tented foil, and heat it in the oven for about 10 minutes per pound (or to an internal temperature of 140 F). Allow ham to rest for 10 minutes before serving.

Pre Cooked Porchetta

Preheat your oven to 325 F. Remove the sticker form the foil and heat the porchetta with the foil on for 45-hour or until heated through. Remove the foil and turn oven up to 425 to crisp skin. Keep a close eye on it so it doesn’ burn!

Turkey

Preheat your oven to 325 F. Place the turkey breast-side up in a large roasting pan on a rack/ bed of onions. Add ¼ to ½ inch of water/ stock to the bottom of the pan, cover the turkey with loosely tented foil and roast for 1-1 ½  hours. Remove the foil, baste, and continue basting your turkey in 1 hour intervals. Total cook time is approximately 20 minutes per pound (15 minutes per pound for unstuffed birds) and the turkey is done when the internal temperature reaches 160 F in two places: the inside thigh and the stuffing. Allow turkey to rest for 15-20 minutes before serving.

Fried Turkey

Remove Turkey from refrigerator and unwrap. Pat skin dry. Preheat your oven to 350 F. Place Turkey in oven in a roasting pan gently tented with Tin Foil. Cook for one hour, remove tin foil and cook until internal temperature reaches 160. Turn oven up to 425 and cook until skin is desired color and crispiness. Remove from oven and let rest for 15 minutes before carving.

Prime Rib (Standing Rib Roast)

Preheat your oven to 450 F. Place the prime rib roast in a roasting pan on a rack/ bed of onions. After 30 minutes, lower the temperature to 350 F. Total cook time is approximately 15 minutes per pound, or until the internal temperature reaches 125 F (rare) or 135 F (mid rare). Allow it to rest for 15 minutes before serving.

Stuffed Quail

Pre-heat oven at 325 F. Place stuffed quail in the center of cooking pan on parchment paper then apply butter using a brush. Add salt & pepper to personal preference. Place in oven for 20-25 min or until reaching 165 F internal.

Chicken Ballotine

Pre-heat oven at 350 F. Remove bag but keep fat and gelatin to apply on ballotine. Place ballotine in the center of cooking pan w/ parchment paper. Add salt & pepper to personal preference. Place in oven for 1 hour and a half or until reaching 165 F internal. Apply butter or cooking fat while cooking to give a nice coloration and crispy skin

Leg of Lamb

Apply salt & pepper as well as fresh garlic, fresh herbs to the leg of lamb as wanted. Dispose pork skin with fat on bottom of roasted pan (fat face up). Turn on oven at 250-280 F. Place leg of lamb in middle of roasting pan. Place in the oven for 7 hours. Add water ½ cup if necessary and as needed during the cooking process. Stuffed Lamb Shoulder

Pre-heat oven at 400 F. Place stuffed lamb in the center of cooking pan then apply honey on surface with 2 tbsp of butter. Add salt & pepper to personal preference. Add lamb stock 5 oz. Place in oven for 20-25 minutes then reduce to 350 F and cook for 1:15 min or until reaching 145 F internal.

Pork Orloff

Pre-heat oven at 410 F. Place pork Orloff in the center of cooking pan. Add garnish on side (potato, carrot, shallots, garlic for example) then add half cup of water or pork stock. Add salt & pepper to personal preference. Place in oven for 20 min then reduce oven to 360 F for 40 min to 1 hour or until internal temperature reach 145 F. Apply cooking juice on roast using a spoon while cooking.

Muscovy Duck

Pre-heat your oven to 350 F. Place the duck in a roasting pan. Add salt & pepper and any spice desired.  Total cook time is approximately 20-25 min per pound, or until the internal temperature reaches 165 F. Check the internal temperature in the innermost part of the thigh and wing and the thickest part of the breast. Apply cooking fat frequently on the surface while cooking. Allow it to rest for 10 minutes before serving.

Beef Wellington

Preheat oven at 425 F.
-In a small bowl crack 1 eggs and only keep yolk, mix with pinch of sugar and apply with a brush on top of beef Wellington roast. Place your roast in middle of sheet tray and place in oven. Cook for 10 minutes at 425 F then reduce temperature to 400 F. Cook until internal temperature reach 130 F (medium rare) then remove from oven and let it rest for 3 minutes. Leave it longer for medium (140 F) or medium well (150 F) well done (160 F).

Prepared Meals: Preheat Oven to 325. Open package and remove sauces or other items in palstic containers. Cover pan with foil and place in the oven and cook for 30 minutes or until heated through. Remove foil and raise oven to 375 and heat until desired color is achieved.
