Salumi (Italian for cured meat)
We start with whole pigs, butcher them by hand then cure, ferment and dry the meat using traditional techniques.

Genoa – red wine, pepper, garlic.
Sopressata – white wine, chile, garlic.
Chorizo – smoked pimenton, chili.
Toscano – toasted fennel, black pepper, red wine
Coffee Lomo - whole cured pork loin with Summermoon Coffee, chile and cumin
Lonzino – whole cured pork loin with fennel, juniper and nutmeg
Pancetta – whole cured pork belly with pepper & juniper
Double Pecan Bacon – pork belly brined in 512 Brewing’s Pecan Porter and spices and smoked over Pecan Wood
Cane Syrup Bacon - pork belly rubbed in salt, spices and pure cane syrup and smoked.
Guanciale – whole cured pork jowl
Prosciutto – Salt cured ham
Coppa - Large muscle from the neck, rolled in paprika, cumin and citrus
Lardo - salt cured pork fat rubbed in herbs and spices
Mortadella - A northern Italian specialty, a smooth emulsified salumi
Rillette - lightly seasoned, slow cooked pork spread
Porchetta di testa - deboned pig head, seasoned, rolled and poached
Mortadella Hot Dogs - Our mortadella, stuffed in lamb casing and ready for the grill
Jalapeno Sausage - fresh sausage made with fresh chiles and our bacon and tasso ground into the mix
Currywurst - a succulent bratwurst spiced with curry powder
Niederwald Sausage - a lightly smoked, slightly spicy Texas style sausage
