Meat Curing Basics

Learn the Basics of Curing meat. The class will feature a discussion on the different types of cured meats, with tastings (YUM!), an overview of the science and techniques of safely curing meat, and hands on curing of pork belly and jowl. Participants will leave with either jowl or belly to finish curing at home. This class is primarily demonstration based with limited hands on participation.

Class is held in our refrigerated butchering room, so please dress accordingly. (We recommend a light jacket and sturdy, closed toe shoes)
